BBQ Pulled Pork Sliders with Apple Crisp Slaw
An all-round, feel-good meal that not only tastes delicious, but fills your pantry with purpose!

Ingredients (makes about 20 sliders): 

  • Pork shoulder (1.6-1.8kg)
  • 2 tbsps olive oil
  • 4 heaped tbsps Leprosy Mission Australia's BBQ Rub  
  • 2 cups chicken stock  
  • 1 brown onion  
  • 2 garlic cloves  
  • BBQ sauce:  
  • Leftover liquid from pork  
  • 2/3 cup tomato sauce  
  • 6 tbsps brown sugar  
  • 2 tsps Worcestershire sauce  
  • 2 tbsps red wine vinegar  
  • 1 tbsp Dijon mustard  
  • 1 tsp smoked paprika  
  •  Salt + pepper to taste 

To serve: 
  • 1 Granny Smith apple, cut into matchsticks
  • 2 cups shredded green cabbage
  • 1/2 cup parsley, finely chopped
  • 1 cucumber, finely sliced
  • Leprosy Mission Australia's Tomato Basil Oregano Chutney
  • 20 slider rolls
Method:

1. Preheat the oven to 150C.
2. Drizzle a tablespoon of olive oil in an oven-safe tray or pot. Add the pork (cap side down), drizzle with another tablespoon of oil and rub in 2 tbsps of the BBQ Rub. Flip the pork and repeat on the other side. 
3. Pour the chicken stock around the pork. Add the onion and garlic to the liquid.
4. Cover loosely with foil and bake in the oven for 6 hours, flipping the pork after 3 hours.
5. Remove the pork and using two forks, shred the meat. Set aside in a large bowl and cover with the foil.
6. Strain the leftover liquid from cooking the pork into a pot. Add the other bbq sauce ingredients and bring to the boil. Boil for 10 minutes, whisking occasionally until the sauce is thick and smooth.
7. Pour the bbq sauce over the pork and stir through until the pork is well coated.
8. Toss the apple and cabbage together in a bowl.
9. Prepare the sliders by spreading generous amount of chutney on a roll. Add 4-5 cucumber slices. Add a generous portion of pork and the apple slaw. Finally, sprinkle with the parsley.
